    Cherry Vanilla Ice Cream from The Splendid Scoop

     If there is ever a perfect time for homemade ice cream it is now.  With temperatures creeping up, it only seems fair to bust out that dusty ice cream maker for a refreshing afternoon treat or dare I say...breakfast?  You don't have an ice cream maker?  No worries, there's plenty delicious recipes that can be made without the use of one.

    Homemade ice cream is a wonderful means to get more nutrition in your diet.  Wait...say that again?!  Ice cream, when done right, can actually be considered a superfood.  A superfood that nourishes your body without making you feel deprived.  Loaded with healthy fats and grass-fed gelatin, it's no wonder homemade ice cream is much superior to it's storebought counterparts.

    That's why I'm so excited that Jessica from Delicious Obsessions just released her newest e-book, The Splendid Scoop and Other Frozen Treats.  It  features 11 gloriously delicious Paleo, dairy-free frozen treats, with or without an ice cream maker.  She also gives you tips to make the best ice cream, slushies, and other treats and gives you advice for seeking out real food ingredients, because let's face it, if we're going to call anything superfood, it better have real and wholesome ingredients.

    I had a chance to look through the book and was pleasantly surprised to see some of my family's favorites but Jessica also had very unique flavors:

    Cherry Vanilla Ice Cream from The Splendid Scoop

    Beat the heat with this homemade treat.

    Ingredients
      

    • 4 cups full-fat coconut milk my pick
    • 2-4 tbsp. fine organic cane sugar or coconut sugar whiz it up in a food processor to make it extra fine (my pick)
    • ⅛ tsp. granulated stevia powder optional - add 1-2 extra tbsp. of sugar if you omit this (my pick)
    • 1 ½ tsp. vanilla extract OR vanilla bean powder my pick
    • 1-2 tbsp. rum vodka, etc. OR grass-fed gelatin, optional (my pick)
    • 1 ½ cups fresh cherries pitted and roughly chopped

    Instructions
     

    • Mix all the ingredients together with a hand mixer until thoroughly combined.
    • Chill completely, at least 4-6 hours, or overnight.
    • Prepare according to your ice cream maker's instructions.
    • About halfway through the churning time, add the cherries. That way everything doesn't sink to the bottom.
    • No ice cream maker? No problem. Jessica has tips to make this without one in her book.

      Yum! My daughter and I have taken ice cream very seriously this year. We are always on the lookout for new recipes! We will have to try this one next. Looks fantastic!

      I'm definitely in the ice cream making mood since I just made my first one with my ice cream maker. Who doesn't love a great Cherry Ice Cream? I do! I will definitely have to give this one a try.
