Homemade ice cream is a wonderful means to get more nutrition in your diet. Wait...say that again?! Ice cream, when done right, can actually be considered a superfood. A superfood that nourishes your body without making you feel deprived. Loaded with healthy fats and grass-fed gelatin, it's no wonder homemade ice cream is much superior to it's storebought counterparts.

Cherry Vanilla Ice Cream from The Splendid Scoop
Ingredients
- 4 cups full-fat coconut milk my pick
- 2-4 tbsp. fine organic cane sugar or coconut sugar whiz it up in a food processor to make it extra fine (my pick)
- ⅛ tsp. granulated stevia powder optional - add 1-2 extra tbsp. of sugar if you omit this (my pick)
- 1 ½ tsp. vanilla extract OR vanilla bean powder my pick
- 1-2 tbsp. rum vodka, etc. OR grass-fed gelatin, optional (my pick)
- 1 ½ cups fresh cherries pitted and roughly chopped
Instructions
- Mix all the ingredients together with a hand mixer until thoroughly combined.
- Chill completely, at least 4-6 hours, or overnight.
- Prepare according to your ice cream maker's instructions.
- About halfway through the churning time, add the cherries. That way everything doesn't sink to the bottom.
- No ice cream maker? No problem. Jessica has tips to make this without one in her book.
