Preheat oven to 325 degrees Fahrenheit. Spread buckwheat groats on a rimmed baking sheet in a single layer. Toast for 25 minutes, shaking to mix the kernels halfway during cooking.
Remove from oven and allow to cool completely. Transfer to an airtight container.
