Air Fryer Duck is an easy main dish that can elevate any meal. The air fryer makes cooking this intimidating game meat easy, giving you crispy skin and juicy meat with minimal effort.
Preheat air fryer convection oven to 425 degrees Fahrenheit. Set a rack in a pan. Pat dry the duck with paper towels.
With the breast side up, score the skin of the duck with a sharp paring knife in a crosshatch pattern. Be careful not to cut all the way through the fat layer into the top meat. Flip the bird and do the same on the other side. Make a slit just below the duck legs.
Season generously with salt making sure to cover the wings, legs, tail, and even the inside of the bird.
Place duck, breast side down, on a rack over a small roasting sheet. Roast for 30 minutes.
Using a pair of tongs, flip the bird breast side up. Tilt duck to drain the juices from the cavity into roasting pan. Baste the duck with the juices and return back to the air fryer for additional 20 minutes or until cooked through. To check for doneness, insert an instant-read thermometer into the thickest part of the bird and if it registers 160-165 degrees Fahrenheit, the duck is ready.
Let duck rest at room temperature before carving. Meanwhile, strain the fat into a small dish for other uses. You can also make duck gravy by cooking ¼ cup of flour in 3 tablespoons of duck fat. Add broth to thin it out. Serve carved duck meat with duck gravy.
