Steep hibiscus in 1 quart boiling water for 2-4 hours (or overnight for best flavor).
Dissolve the honey or monkfruit in 1 cup of warm water in your pitcher. Note: do not use hot water for the honey as the temperature will kill all the beneficial enzymes.
Add lemon juice, if using and give it a quick stir.
Enjoy immediately on ice or refrigerate for up to two weeks.
Notes
It's always best to start low on the sweetener and add more as necessary, especially when working with low-carb sweeteners such as Monkfruit.
