Enjoy the flavors of pizza but without the heavy carbs. This low-carb Crustless Pizza Skillet is made in one pan, packed with protein, healthy fats, and zesty vegetables.
3cupssemi-hard cheese of choice (mozzarella, cheddar)divided
1cupbell pepperchopped
½cupred onionsliced
6large white mushroomssliced
1cupblack olivessliced
Instructions
Meat Crust
Preheat oven to 425 degrees Fahrenheit. In a medium-size bowl, combine meat, oregano, salt and pepper together.
Spread meat mixture evenly across a 12 inch cast iron skillet or casserole dish, making sure it reaches to the sides. Bake for 20-25 minutes or until fully cooked.
Prep Pizza Toppings
While meat crust is cooking, prepare all the pizza toppings. Cut the bell peppers. Slice red onions, mushrooms, and black olives. Grate cheese.
Assembling Pizza
Spread pizza sauce directly on top of the meat, making sure to get the outside of the patty. This is important so the meat doesn't dry out.
Cover the pizza sauce with 2 cups of cheese.
Add pizza toppings evenly across the cheese.
Top with remaining cheese and return to oven for another 10 minutes or until vegetables are tender and cheese melts.
Remove from oven and set aside for 10 minutes for juices to settle. Garnish with Parmesan cheese and red pepper flakes if desired. Cut into 6 slices and serve.

Notes
Leftovers can be stored in an airtight container for up to 4 days in the refrigerator. Reheat in non preheated air fryer/convection oven for 15 minutes at 400 degrees Fahrenheit.
Use your favorite pizza toppings but it's best to use a lean meat like turkey to limit the fat that is released during the crust baking.
