Instant Pot Sprouted Brown Rice with Beef (healthy one pot meal)
This Instant Pot Sprouted Brown Rice with Beef recipe is a simple dish that is full of flavor and bound to make the entire family happy. This dish is healthy, easily digestible and simple to make for a quick one pot dinner with plenty leftovers for lunch.
Rinse rice in a colander. Set aside to fully drain all water.
Press "Saute" on Instant Pot and add avocado oil.
Once the pot registers "hot" on the display screen, add meat and brown on one side.
Stir the meat to release from pot, add sliced onions and carrots and saute for 4-5 minutes or until onions are translucent.
Add the seasonings and coat to stir. Press "cancel" on Instant Pot to stop the saute function.
Add the rinsed rice to pot and give a quick stir. Level the rice, meat, vegetables and seasonings with the back of a wooden spoon.
Carefully pour hot bone broth, not to disrupt the rice.
Tuck garlic cloves, bay leaves and pieces of butter** on top of the rice.
Close lid, set the valve to sealing position. Press "manual" mode and decrease time to 20 minutes.
When cycle is completed, allow to naturally release pressure for 10 minutes followed by quick release the remaining pressure.
Carefully remove the pressure cooker lid. Allow the rice to rest for 20 minutes before stirring and serving.
Notes
*Depending on the sodium content of the broth, you may want to add much more than 1 teaspoon of salt but that is a good amount to start with.
