Bacon Avocado Jalapeño Poppers

With only 5 simple ingredients, these Jalapeño Poppers are filled with creamy cheese mixture topped with an avocado slice and wrapped with crispy bacon as it's baked to perfection.

Ingredients

  • 10 jalapeño peppers
  • 8 oz organic cream cheese
  • 8 oz Monterey Jack cheese or cheddar cheese, shredded
  • 1/2 teaspoon red pepper flakes (optional for more heat)
  • 1 large avocado, peeled, seeded and sliced
  • 16 oz pastured thin-cut bacon*

Instructions

  • Preheat oven to 400 F degrees. Line a baking sheet with foil and place a baking rack on top to elevate the poppers. 
  • Rinse and dry the peppers. Half them lengthwise and scoop out the membrane and seeds. 
  • In a small bowl, combine cream cheese and hard cheese and red pepper flakes for more heat if desired. 
  • Fill halved peppers with cheese mixture, top with an avocado slice and wrap with bacon. 
  • Bake in preheated oven for 20 minutes or until bacon is cooked through and crispy. Broil for a quick minute to achieve that crispy top. 
  • Cool for 5-10 minutes to allow cheese to settle.  Enjoy warm!

Notes

*Cut bacon strips in half crosswise to create more strips.
