Coconut Flour Brownies (Paleo, GAPS)

These Coconut Flour Brownies are made with only a handful of ingredients and sweetened with honey, these treats are Paleo, GAPS and totally dairy free.

  • Preheat oven to 350 degrees Fahrenheit. Line a 9X9 pan with parchment paper and spray with coconut or avocado oil.
  • On medium-high speed, mix eggs with honey or maple syrup for approximately 4 minutes or until mixture is lighter in color and airy.
  • Add melted coconut oil and mix for another 30 seconds.
  • In a small bowl, whisk together coconut flour, cacao powder, baking soda, and salt together.
  • Add the dry ingredients to the wet mixture and hand stir until all flour has been combined. Add vanilla and give a quick stir again.
  • Pour into prepared pan. Top with nuts if desired and bake for 30 minutes or until toothpick comes out clean.
  • Remove from oven and allow to cool for 15 minutes before cutting into it.
