Every year around this time, I’m always itching to make more summer deserts. The kind where generous amount of fresh berries is involved and the oven has been {temporarily} retired. I love no-bake treats, especially if they also happen to be gut-healing and nourishing like these Strawberries ‘n’ Cream gelatin cups.
To be completely honest, these aren’t truly a Strawberries n’ Cream concoction. No cream is involved. It’s better….because it actually calls for probiotic-rich yogurt instead. But Strawberries n’ Yogurt doesn’t roll off the tongue like Strawberries n’ Cream does so Strawberries n’ Cream it is.
Oh and how creamy and luscious this sweet desert really is. Notice how the red is a pleasant ruby color with matte undertones. I was never a fan of those clear, sharp and bright Jello colors where you could actually see through the jello?! And to make matters worse, those boxed jellos would always stain the dishes. If it can do that to your dishes what is it doing to human organs?!? Good question.
So the yogurt, huh? I love homemade yogurt and you can check out my easy instructions on how to do that HERE. If you’ve read my blog for any length of time you know that I’m all about intentionality in the kitchen and life, in general. But definitely in the kitchen. Case in point, when I cook grains, I almost always cook them in bone broth (unless I’m out of bone broth and then the world stands still while my Instant Pot whips up another batch). Why? In short, to add more nutrients and minerals to our diets. Just the simple task of cooking grains in bone broth increases your vitamin intake and it doesn’t take any more time than cooking them in water. #winwin
Same concept with these gelatin cups, if I can add more nutrition to them, why not?
