Easy 2-Minute Keto Pumpkin Spice Latte (Low Carb, Paleo, GAPS)
Thanks to the copious amount of healthy fats in one cup of this Keto Pumpkin Spice Latte, you can easily replace your bulletproof coffee with this drink. It also makes a great snack in the afternoon (see notes to enjoy this caffeine-free).
Caffeine-Free Keto Pumpkin Spice "Latte"
We love the bold flavor of this Herbal "Coffee" rich in detoxing herbs such as chicory and dandelion. I usually have a large batch of this pre-made for when I'm craving the "coffee" flavor without the caffeine. I brew it just as I do coffee - using a French Press. Note: this herbal "coffee" doesn't taste exactly like coffee but does have the consistency and richness of it so it works for us.
For an even simpler caffeine-free latte, you can also just steep some roasted dandelion root tea (these come in convenient tea bags) and continue with the rest of the recipe as directed. So easy and yet satisfies that craving for something smooth and delicious.
2-Minute Magic
The beauty of this Easy Keto Pumpkin Spice Latte is that it truly does take 2 minutes of active prep time. Assuming that coffee or herbal coffee has already been brewed, the rest of the ingredients are whisked in a small saucepan over medium-high heat. Helpful Tips for this Easy Keto Pumpkin Spice Latte
- Use a small saucepan and whisk everything over medium-high heat to save extra dishes.
- To make this drink PALEO compliant: use ghee in place of butter and coconut cream in place of heavy cream. If you are not necessarily low carb, you may use coconut sugar or maple syrup instead of monkfruit.
- To make this drink GAPS compliant: use honey instead of monkfruit and gently blend everything over medium-high heat.
- Use a frother to create foam.

- French Press - For years, we had the beloved Bodum French Press Coffee Maker but it was made out of glass and contained plastic parts that I was not happy with. - Frother - to create that foamy luscious goodness. Buy one with the removable whisk for easy washing.

Easy 2-Minute Keto Pumpkin Spice Latte (Low Carb, Paleo, GAPS)
Ingredients
- 1 cup freshly brewed hot coffee or herbal coffee
- 2 tablespoons pumpkin puree
- 2 tablespoons collagen peptides optional
- 1 teaspoon pumpkin spice
- 1 tablespoon MCT oil
- 1 tablespoon butter or ghee if dairy free
- ⅓ cup heavy cream or coconut cream
- 1 ½ tablespoon monkfruit sweetener *
- whipped cream & ground cinnamon for garnish
Instructions
- In a small saucepan, combine all ingredients but coffee and whisk gently over medium-high heat.
- Once thoroughly combined, gently pour in the coffee and whisk with a frother to create foamy texture.
- Pour in a mug, top additional whipped cream if desired, and dust with cinnamon. Enjoy immediately.
Notes
- To keep this latte low carb, use monkfruit. To make it paleo, use same amount of coconut sugar or maple syrup. To make it GAPS, use 1 tablespoon honey.
